Let's talk homemade dressings—the easy, 'low hanging fruit' of healthy habits. Not only are they healthier, but they're also cheaper and tastier than those store-bought bottles.

Now, you might be wondering, "Why healthier?" Well, for starters, you're using fresher oils that haven't gone rancid or oxidized. Plus, you can kiss those pesky preservatives and additives goodbye. And let's not forget about the fresh, health-promoting ingredients like ginger, garlic, and citrus that you can throw into the mix.

Our foolproof formula? Three parts oil/fat, one part acid, half part flavor agents, and seasonings to taste. Just toss it all into a mason jar, give it a shake, or whisk it up in a bowl. Easy peasy.

Chef Vanessa's Lemony Dressing:

Simple and neutral, perfect for any salad.

3T Olive oil, 1T lemon juice, 1 medium garlic grated on microplain (or mashed), zest of the lemon you used (zest it first, then cut and squeeze!), 1/2 tsp maple syrup, salt and pepper

3T avocado oil, 1T apple vinegar, 1T mashed raspberries or strawberries (from frozen), 1/2 tsp honey, and salt and pepper.

A taste of California sunshine with avocado, lime, and cilantro.

1/2 avocado, 1T lime juice, zest of 1 lime, 1 small handful of cilantro, 1 pinch cayenne, salt and pepper to taste.
